Authentic Tamal Torta

Torta de tamal, or guajolota, is a delicious and comforting dish that is very popular in Central Mexico prepared by simply stuffing a bolillo roll with a delicious tamal. This easy recipe for an authentic tamal torta shows you how to prepare spicy green pork tamales from scratch. You will love it!

  • 2 tablespoons vegetable oil
  • 1/2 cups onion
  • 2 cloves garlic, peeled
  • 2 cups tomatillo
  • 1/2 cups chicken broth
  • 3 Jalapeño chiles, cut into strips
  • some salt, for the sauce
  • some pepper, for the sauce
  • some corn husks, rehydrated
  • 4 cups masa mix for tamales
  • 1 cup lard
  • 2 1/2 cups chicken broth
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 2 cups pork, cook and cut into small-sized cubes
  • 6 bolillo rolls

  • For the sauce: In a pot, heat oil and cook onion, garlic, tomatillo, and Jalapeño chiles for 10 minutes.
  • Transfer previous ingredients to a blender. Add chicken broth and season with salt and pepper. Blend until smooth and set aside.
  • In a mixer, mix masa mix for tamales and lard for 5 minutes or until completely incorporated. Add water little by little until a homogenous, moist dough is formed. Add baking powder and salt and mix for 10 minutes. Set aside.
  • In each of the corn husks, place one tablespoon of masa mix for tamales, one tablespoon of sauce, pork, and more sauce. Cover with more tamal dough. Close corn husk and fold the bottom part.
  • Cook green tamales in a water bath for 40 minutes.
  • For assembling the authentic tamal torta: Slice a bolillo roll in half. Place tamal inside.
