  • 1 mojarra fish, gutted, 0.8 pounds
  • 4 cloves garlic
  • 1 teaspoon garlic salt
  • lime peels
  • black pepper
  • 1 liter vegetable oil
  • flour

  • Heat oil in a skillet. Choose a deep skillet to dip the fish.
  • Clean mojarra and dry it. Make shallow cuts, diagonally. Season with salt and pepper. Dip in flour.
  • Add garlic and lime peel to skillet with oil. Once the oil is burning hot, add mojarra. Fry for about 15 minutes or until cooked through.
  • Place fried mojarra in a sieve and pat-dry with paper towels to remove excess oil.
