  • 8 cups whole milk
  • 3 cups sugar
  • 3 sticks cinnamon, for the chongos zamoranos and for garnish
  • 3 tablespoons piloncillo, shredded 
  • 2 limes, juice

  • In a pot, heat milk. Add sugar, cinnamon, and piloncillo. Heat slightly to let the ingredients release their aroma, but do not bring to a boil.
  • Add lime juice to the previous mixture so the milk curdles.
  • In a small pot, cook traditional chongos zamoranos until brown. Do not stir for 2 hours.
  • Remove traditional chongos zamoranos from the pot and strain. Serve traditional chongos zamoranos garnished with cinnamon sticks.
